Day 9: Thanksgiving in April

Today was another great paleo day to add to the books. I am somewhat shocked that I had zero cravings for the carbs I cherished so much just over a week ago! Let’s hope that continues shall we?

For breakfast, I ate a chef-prepared meal- Lamb merguez sausage and Red Russian Kale frittata. It’s too bad I was in a rush and forgot to take a picture because it looked really pretty! I have never heated up cooked eggs before, but I decided to put it in the toaster on the broil setting for about 7 minutes. It actually tasted pretty good for re-heated eggs! I also had one of my paleo apple muffins on the side. It tasted better than it did last night for some reason. Also ate an apple when I got to work… helped relieve some stress from my slow work commute that made me 30 minutes late!

Lunch was a salad- spinach, avocado, hard-boiled egg, carrots, cucumber, red pepper. I hope you are not getting bored of all of these lunch salads because I certainly am not! Really, I love them. I also brought an apple muffin to enjoy after lunch.. can’t have too many paleo muffins in one day right? Of course fruit was on my afternoon menu, so I had 1/2 banana, some melon and strawberries to make sure I wasn’t going to CrossFit on an empty stomach.

Dinner was by far the best meal of the day. I chose to have one of the meals from the chef who is testing out her paleo program on some gym members. Turkey and cranberry chili, made from ground turkey, cranberries, walnuts, butternut squash and a hint of sage. Sounded like a Thanksgiving-inspired meal to me! It was uh-mazing!

I sauteed kale with some garlic on the side, which was just okay. So naturally I decided to add it to the chili so that it would be more enjoyable 🙂 I am hoping to make more meals with ground turkey- I used to LOVE it (mom you might have to make me some famous sauce when I’m home) but I cut it out of my diet along with red meat a couple years ago. I’m still slowly experimenting with adding more meats besides chicken into my diet. Yay protein!

  1. is it ok to use our fav marinara sauce or just plain crushed tomatoes????? I don’t know if your brother will go for that!!!!

    • I just checked the ingredients: Tomato Puree (Water, Tomato Paste, Citric Acid), Diced Tomatoes, Sugar, Soybean Oil, Salt, Extra Virgin Olive Oil, Spices, Onion, Garlic.
      Besides the sugar/ salt which is not terrible, the soybean oil is the only paleo no-no. But, I think I could let Newman’s slide. Of course, I will request lots of veggies in place of the pasta 🙂 Maybe even some spaghetti squash!!
